Wild Easton's is a small, family-owned business located in Brussels in beautiful Door County, Wisconsin. We were founded in 2024 by Josh and Andria Hails, who share a passion for providing healthy food products to our community. Our mission is to offer fresh, locally sourced ingredients and homemade products to our customers. We sustainably forage or personally grow all of our products.
As well as a nice selection of hydroponically grown microgreens, salad greens, choys, and several varieties of gourmet mushrooms, we also make seasonings and spices from our products as well as sustainably foraged, local ingredients. Our products are all grown in small scale vertical farms, with all operations overseen by Josh and Andria. This helps ensure that only the best quality produce, picked at the peak of freshness is reaching our customers. While we are not currently certified Organic, we do use environmentally clean growing practices and are conscious of our impact on the environment.
We're dedicated to making sure we deliver the freshest, best quality produce to all of our customers, both large and small. Josh and Andria both have extensive botanical backgrounds, on both commercial, and personal levels. Andria was a floral importer with a wholesale florist for 20 years as well as an avid gardener and forager. Josh ran a commercial greenhouse for a few years and coordinated several commercial mum grows. He is a hydroponic specialist and makes a mean compost heap.
At Wild Easton's, we want to provide you with healthy, pesticide free product- YEAR ROUND! Since all of our product is grown indoors, not only can we provide you with dirt and bug free mushrooms and hydroponically grown salad greens and microgreens, but we can produce it through the frigid Wisconsin winters. With our delivery service, you don't even have to leave your home to eat this fresh! We deliver all throughout Door County, and there is no minimum purchase. We also do bulk pricing discounts, so please feel free to reach out with any questions.

Subscription service consists of weekly, biweekly, or monthly delivery service, consisting of a minimum of 4 deliveries or more.
Delivery is $3 as far North as Fish Creek on the bayside or Baileys Harbor on the lakeside, but the fee is waived with a purchase of $15 or more. North of Fish Creek/ Baileys Harbor- $5 delivery surcharge, or save your surcharge and meet us!

We grow mainly salad greens, microgreens, and mushrooms, but occasionally we throw something even more fun in the mix! In microgreens we grow Basil (both purple and green), Broccoli, Carrot, Dill, Pea, Radish, Sunflower, and also offer Easton's Mix- which is a nice mix of micros that compliment each other (mix changes weekly).
Our Gourmet Salad Blend includes a variety of lettuces as well as other greens that are not only beautiful, but also SUPER healthy. Some of our current varieties include in lettuces; Merlot, Forellenschluss, Yedikule, May Queen, Crisp Mint, Flashy Butter Gem, Bronze Beauty, Black Seeded Simpson, and many many more! Our other greens include beauties like Tatsoi, Bloody Dock Sorrel, Kales, Bok Choy's, endive, and others. We do change out our mix on the Gourmet Salad Blend weekly, so that only the freshest and sweetest greens go in the mix.
Our mushrooms are currently in limited supply while we replenish our stock. While we do have them for small orders, we are not accepting bulk orders at this time. Our mushroom production should be back up to normal by mid to late November. The current varieties we grow are; Blue Oyster, King Blue oyster, Pink Oyster, and Lion's Mane, but we are working on adding King Trumpet Oysters, Coral Tooth, and Brown Beech in the coming weeks.
We do currently have hydroponic strawberries as well! They are just starting to ripen, and this is a new venture for us, so stay tuned to see how they turn out!
Microgreens are basically just baby versions of larger veggies. They are cut at a much smaller stage in their development, so they're packed with concentrated vitamins and nutrients. Unlike their big veggie counterparts, which can take weeks, or even months to grow, microgreens are typically grown in 7-10 days with a fraction of the resources needed!
Well, they're yummy for starters! Since microgreens have a shorter growing cycle, they have a more concentrated flavor. Their benefits are also concentrated- one study showed up to 40 percent more beneficial nutrients and components over their full grown versions! Microgreens can supply calcium, iron, magnesium, and vitamins A, C, K, and beta carotene. They're also high in antioxidants and dietary fiber, and may support gut health. Some of the nutrients in microgreens have been shown to be heart healthy as well!
Microgreens small size makes them incredibly versatile! They're great as a garnish on meats or fish, and fantastic in sandwiches or wraps. You can use them in soups, stews, and sauces. You could eat them on scrambled eggs or in omelets. They really pack a punch in smoothies and they make a super nutritious greens powder! Basically you can use them anywhere you would use full size veggies as well as some places you wouldn't.
Mushrooms are the fruiting body of fungi. They come in all kinds of shapes and sizes, and not only are a lot of them edible, they're delicious as well! They can be foraged from the wild- with knowledge and caution, or grown intentionally under certain conditions.
Mushrooms are a low calorie food with lot of benefits! Depending on the variety, mushrooms can contain copper, selenium, zinc, vitamin D, B6, and potassium. They can also be a decent source for fiber, protein, and antioxidants. Mushrooms are a fantastic vegan option for meat substitutes due to their "meaty" texture. There are a ton of medicinal benefits of mushrooms as well, but as those statements haven't been evaluated by the FDA, we urge you to do your own research.
That's ok, not everyone does. With that being said, most people have only tried 4-5 of the approximately 14,000 mushroom species that grow on the planet. Mushrooms have a multitude of tastes, textures, and flavors and if you're daring enough, you are bound to find one you love! If you just can't stomach the idea of eating one, but still want the health benefits, you can always dry your fresh mushrooms and turn them into umami seasoning.
Yes! The majority of the mushrooms sold by Wild Easton's are cultivated onsite in a sterile environment from strains purchased from reliable sources. While some are cultivated from strains foraged in the wild, Andria is WMS Wild Mushroom Certified and trained to make wild identifications accurately. When actual wild foraged mushrooms are available, those will come with all documentation required. It is recommended that whenever trying mushrooms for the first time, you should only eat a small amount (about two tablespoons) and then wait 24 hours before consuming anymore as some people will have an allergic reaction to certain types of mushrooms.
